Colorado Western was the theme for Spectrum Retirements national awards banquet.  The event was held at the Monclair Civic Building also known as the Molkery Building.  The Montclair Civic Building was a very convienient yet historic venue for this event.

Classic's event specialist Toni Hrudka organized every detail for the theme of this event.  Decor included floral arrangements for the oversized boots, a real cowboy boot full of flowers as a center piece at each table, light western decor, props and the crowd favorite...bronze cowboy.  Dressed in western attire with every inch painted bronze and most importantly; completely still.  He is passed off as a statue or prop till he shifts poses.  A great performer.

Chef Michael Connolly created a fantastic custom menu for this event which included:

Hand passed appetizers of:

  • Chipotle Lime Shrimp in a Tomato Basil Aioli
  • Spinach, Bacon & Goat Cheese Stuffed Mushrooms
  • Marscapone & Fig Preserve Crostini
  • Grilled Eggplant with Sundried Tomato & Goat Cheese in a Balsamic Syrup

Dinner was served plated with the folowing menu made from scratch: 

  • Baby Mixed Green Salad with Strawberries, Red Onion & Toasted Almonds
  • Ruby Trout Florentine
  • Carved Buffalo Top Sirloin
  • Chipotle Augratin Potato
  • Roasted Seasonal Vegetables

Hand crafted Colorado beer and Colorado wine was served throughout the event.
